Easy Peasy Birthday Cake

Have you promised to make someone a delish birthday cake? Well never fear, here’s the perfect (and easiest) recipe for chocolate lovers! This is so easy to whip up in half an hour, and tastes just as good warm as it does cold!

Ingredients:

  • 100g butter
  • 175g caster sugar
  • 75g light brown sugar
  • 125g dark chocolate
  • 1 tbsp golden syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 100g plain flour
  • ½ tsp baking powder
  • 2 tbsp cocoa powder

Method:

  • In a saucepan, place the butter, both sugars, chocolate and golden syrup and melt gently on a low heat until it is smooth and lump-free.
  • In a separate bowl, sift the flour, cocoa powder and baking powder. Once the wet mixture has cooled down, add to the dry mix and beat using an electric beater. Add in the eggs and vanilla extract and beat until mixture is smooth. Do not over mix! Pour the mixture into a greased and lined 9ince cake tin.
  • Bake in oven at 200oC for about 25-30 mins.
  • When a toothpick inserted into the cake comes out 1/3 clear, take the cake out the oven and transfer to a wire rack to cool. My preference is to serve this warm with a scoop of vanilla bean ice cream!
