Homemade Chocolate Truffles

Whenever I’m invited for dinner and want to bring something a little more personal, I make these extra simple and yummy chocolate truffles. I put them in beautiful boxes with a ribbon and a tag and stamp a message on it. They always put a smile on a host’s face and are great served at the end of a meal with an espresso.

    Ingredients:

  • 250g dark chocolate
  • 5cl double cream
  • 75g unsalted butter
  • 2 spoonful of sugar
  • 2 egg yolks
  • 50g cocoa powder

    Directions:

  • Melt the chocolate in a bain-marie until smooth. Gently add the cream, butter and sugar.
  • Put aside for 5 minutes to allow the mix to cool down, then add the egg yolks. Mix until you have an unctuous texture.
  • Put in the fridge for 2 hours.
  • Pour the cocoa powder in a bowl.
  • Use a spoon to scoop a little bowl of chocolate. Use your palms to give it a rounder shape then roll in the cocoa powder.
  • Leave in the fridge for another 2 hours. (Although, I guarantee at this point, you’ll already have devoured quite a few. Well, you have to make sure of the quality, right? It is only, mmh, professional…)

    Additional Chocolate Truffle Options:

  • We love to make two bowls, one with white chocolate, another with dark. Then we create spheres with a little of each mix.
  • For an adult version, add a little rum, Grand-Marnier, raspberry liqueur… or if you’re feeling luxurious add a dash of champagne! You can also add a little espresso if you do not like alcohol.
  • Like an extra crunch? Chopped Oreos or pistachios can be quite fun.
  • These can easily be made with children who will love rolling them in hundreds, or even thousands, or love sweets! Making these truffles is an ideal activity on those rainy weekends and can be quite a nice activity for a birthday party, since the children can personalise them and show off to their parents (who will, no doubt, love you to bits after that!).
