Add Some Filling to Your Cupcakes
It’s National Cupcake Week, and to celebrate, I’m going to show you how to spice up your cupcake! I’ve already shown you how to make Easy Peasy Vanilla Cupcakes, but I’m also going to show you how to make them REALLY tasty with a few fillings.
Once you’ve baked your cupcake goodies, leave them to cool. Then take an apple corer and dig out some space in the centre, and it’s now time to fill the centre with an amazing sauce!
Here are a few choices:
- 250g good quality dark chocolate, chopped
- 250ml double cream
- Heat over a bain marie until mixture melted and thickened.
- 120g light brown sugar
- 120g butter
- 100ml cream
- Melt butter and sugar in saucepan over low heat. When melted, pour in cream and combine.
- Zest and juice of 4 unwaxed lemons
- 200g sugar
- 100g butter
- 3 eggs and 1 egg yolk
- Melt zest, juice, sugar and butter in bain-marie. In a separate bowl, whisky eggs. Once bain-marie mixture has melted, stir in eggs and keep stirring until mixture thickens. Will take about half an hour.

If you’re really daring, top your filled cupcakes with a swirl of buttercream and a few toppings! Enjoy you cake snobs!
