Amazing Disappearing Berry Oat Bars

These berry oat bars are so delicious that even in a house of only one person they’ll disappear by the end of the day. They’re extremely good straight out of the oven when still warm, or if you wait a couple hours they’ll settle into irresistible gooey chunks of berry goodness that you can pull apart! Don’t be intimidated by the American measurements (cups and spoons). Use a small juice glass for your cup and for the spoons, just use real life teaspoons and tablespoons.

Yields: 12 Medium Square Bars

Ingredients:

  • 5 cups oats
  • ½ cup honey
  • 1/3 cup maple syrup
  • 1 cup sunflower oil
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 3 ½ cups mixed berries (I used a frozen summer fruit berry mixture from Morrisons which included strawberries, blackberries, redcurrants and raspberries.)
  • ½ cup corn flour or arrowroot powder

Procedure

  • Blend 2 cups of oats in a food processor or blender and pulse until the oats resemble flour. Set aside.
  • Preheat the oven to 375 °F (190°C).
  • Mix together the oat flour you made in step one, the remaining 3 cups of oats, honey, half of the maple syrup, oil, salt and vanilla until they are thoroughly combined.
  • Separate the crumbly dough into two halves. Press the first half into the base of a square baking tray. Bake in the oven until lightly brown (about 15 minutes).
  • While the bottom layer of dough is baking, combine the berries, corn flour (or arrowroot) and the remainder of the maple syrup.
  • Pour the berry mixture onto the bottom crust and spread around evenly. Crumble the remaining half of the dough over the top of the berries. Press down firmly.
  • Return the tray to the oven and bake until the top layer of crust is a golden brown. This will take anywhere between 25 and 40 minutes depending on the strength of your oven.
  • Let bars cool slightly before cutting into pieces. When fully cooled, remove from tray with a spatula and pile on a plate so they can look pretty for a few minutes before they vanish!
