Vegan Apple Berry Fritter Bake

Everybody’s heard of apple fritters but have you ever tried combining them with berries and baking them in the oven? Didn’t think so! Well don’t shy away from this fabulous new idea. Inspired by the classic fritters and the ever-fabulous berry apple crumble this delectable pudding deserves a place on everyone’s the dessert menu!

Vegan Apple Berry Fritter Bake

Ingredients:

  • 1 teaspoons dried yeast (if you are using active dried yeast, follow the instructions on the packet)
  • 3 ½ tablespoons sunflower oil
  • ½ cup / 125ml rice milk
  • 1 cup wholegrain brown flour
  • 1 cup warm water
  • ½ cup sweetener (agave syrup works well)
  • 5 apples
  • 2 cups summer berries (blackberries, strawberries, raspberries, currents etc…)

Method:

  1. Dissolve the yeast in ½ cup of warm water. Let sit for a few minutes until the yeast is bubbly.

  2. Meanwhile, combine the oil with the milk, flour.

  3. When the yeast is ready, combine it with the milk mixture. Stir in the sweetener of your choice. I recommend using syrup such as agave syrup or maple syrup.

  4. Peel and core the apples. It is easier if you have an apple corer but if you only have a knife to hand that will work just fine. Slide the apples into thin rings.

  5. Heat up a frying pan on the stove over med-high heat. Coat the bottom of the pan with sunflower oil. When oil is hot, dip apples into the batter on at a time and then fry them in the oil until they are golden brown. You may need to do this in a few batches as you’ll need space in the pan to be able to flip the apples over.

  6. When the apples are fried, place them all into a deep pie dish. Cover them with the berries and pour the remaining batter over the top of all the fruit. The batter will drip down to the bottom of the dish, which will result in a bready texture.

  7. Place dish into the oven and bake at 175 degrees Celsius (Gas mark 4) for 45 minutes. Check occasionally to prevent burning. Depending on your oven your baking time may be slightly less or slightly more.

  8. Remove from oven and serve hot!

Enjoy this delicious treat after what I’m sure was an equally delicious dinner! Of course, who says you have to wait until after dinner to eat it? Why not bake it for breakfast or an afternoon snack! However you like to eat your fritter bake…enjoy!
