Apple and Cinnamon Muffins

Woo-hoo! It’s Friday! This week has really been a long one and I’m in some need of some sweet baked therapy; some simple Apple and Cinnamon Muffins are just what the doctor ordered to kick start my weekend, and cheer me up when I think about next Monday!

Apple and Cinnamon Muffins (Makes 12)

Ingredients:

  • 2 Eggs, beaten
  • 100g Golden Caster Sugar
  • 210ml Milk
  • 100g Butter, melted
  • 300g Plain Flour
  • 2 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Cinnamon
  • 3 Bramley Apples

Method:

  1. Preheat the oven to 190c/ (Gas 5) and line a 12-hole tin with muffin cases.
  2. In a large bowl, mix together the beaten eggs, sugar, melted butter and milk; then sift in the flour, baking powder, salt and cinnamon until the mixture becomes smooth.
  3. Peel, core and the chop the apples into approximately 1cm cubes and mix into the bowl
  4. Spoon the mixture into prepared cases and bake for 20-25 minutes.

These taste great with a little toffee or caramel sauce on top, but that’s entirely up to you and your taste buds.

Enjoy the muffins and make the most of the weekend; you only get two days so don’t waste them!
