Apple and Cinnamon Muffins
Woo-hoo! It’s Friday! This week has really been a long one and I’m in some need of some sweet baked therapy; some simple Apple and Cinnamon Muffins are just what the doctor ordered to kick start my weekend, and cheer me up when I think about next Monday!
Apple and Cinnamon Muffins (Makes 12)

Ingredients:
- 2 Eggs, beaten
- 100g Golden Caster Sugar
- 210ml Milk
- 100g Butter, melted
- 300g Plain Flour
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1/2 Tsp Cinnamon
- 3 Bramley Apples
Method:
- Preheat the oven to 190c/ (Gas 5) and line a 12-hole tin with muffin cases.
- In a large bowl, mix together the beaten eggs, sugar, melted butter and milk; then sift in the flour, baking powder, salt and cinnamon until the mixture becomes smooth.
- Peel, core and the chop the apples into approximately 1cm cubes and mix into the bowl
- Spoon the mixture into prepared cases and bake for 20-25 minutes.
These taste great with a little toffee or caramel sauce on top, but that’s entirely up to you and your taste buds.
