Valentines Raspberry Kiss Cupcakes
These cupcakes are filled with are two of my favourite things – white chocolate and raspberries. These will make for a great Valentines treat and they taste absolutely scrumptious.
Raspberry Kiss Cupcakes (makes 12)

Ingredients
- 120g Butter
- 75g white chocolate
- 150g caster sugar
- 1 tsp vanilla essence
- 2 eggs
- 190g self-raising flour
- 160ml water
- 24 fresh raspberries
Method
- Melt the butter in a large bowl over a pan of boiling water. When the butter is half melted, add the white chocolate and stir until both are melted. Check for lumps and remove from the heat.
- Add in the sugar, then the eggs and vanilla essence and mix well. Then sift in the flour and beat together until mixture is smooth.
- Stir in the water, a little at a time, mixing well between additions until all water has been absorbed into the batter. Bear in mind that it will be quite runny.
- Line a 12-cup muffin tin with paper muffin cups. Pour about 2 tablespoons of batter into each cup.
- Place 2 fresh raspberries into each cup, then divide the rest of the batter equally among the cups.
- Bake at in a preheated open at 180°C for approximately 20 minutes.
- Then simply remove from the oven and leave them to cool for a few minutes and enjoy!

I recommend you eat these little beauties when they’re fresh out of the oven and tear into them while they’re still warm. And on that note – I’m off to make some more.
